Apple Oatmeal Whoopie Pies with Peanut Butter Frosting

(makes 12 whoopie pies)

Cookies:

  • 1 1/2 cups whole wheat flour
  • 2 cups quick oats
  • 1 tsp baking soda
  • 2 tsp gr. cinnamon
  • 4 tbsp melted butter
  • 1/2 cup brown sugar, lightly packed
  • 1 large egg
  • 1/2 cup maple syrup or honey
  • 2 tsp vanilla extract
  • 1 1/2 cups Ontario apples, diced finely (about 1 large apple)

Frosting:

  • 1/2 cup smooth peanut butter
  • 1 cup powdered sugar
  • 2-4 tsp milk or cream

Instructions:

Preheat oven to 325 F. Line 2 baking sheets with parchment paper. In a large bowl, toss the quick oats, flour, baking soda and cinnamon together. Set aside. In a medium bowl, whisk together the melted butter, brown sugar, eggs, maple syrup or honey, and vanilla. Add the wet ingredients into the dry ingredients and mix together until just combined. Fold in the diced apples. Using 2 spoons, drop small rounded scoops of batter about 2” apart on the parchment paper. Slightly press the balls to flatten them. Bake for 10 – 12 minutes or until the edges are golden brown. Let cookies completely cool before filling.

To make the filling use an electric mixer and combine the peanut butter and powdered sugar. Add the milk or cream, 1 tsp at a time until the consistency is spreadable. Spread the filling on one cookie, and top it with another. Enjoy!
